Gluten Free Almond Flour Cookie Recipe That Will Rock Your Sweet World!

For all you sugar addicts, like me, with additional sensitivities -- it can be a struggle to find healthier options that will satisfy cravings, but I think I've found one! This recipe is so easy and only takes about 20 minutes (total) to make.  Please leave me comments below about your experience and let me know how you might modify and enjoy them! 

Gluten Free Chocolate Chip Cookies 

*gluten-free

*vegan

*paleo friendly

*egg free

*naturally sweetened 

INGREDIENTS

  • 2 cups blanched almond flour 
  • 1/4 cup avocado oil
  • 1/4 cup maple syrup (at room temp)
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons vanilla extract 
  • 2 teaspoons ground flax seed (optional)
  • 1 teaspoon apple cider vinegar (optional, helps rise)
  • 1/4 cup dark chocolate chips (and / or chopped walnuts or pecans)

Preheat the oven to 250ºF and line a large baking sheet with parchment paper. Mix all ingredients together and fold in chocolate chips and walnuts at the end. Cook for approximately 30-35 minutes. Makes about 12 cookies. Happy Baking!
