Easy, Healthy Valentine's Day Recipes (As Seen On TV)

It's ALMOST that time again and wouldn't ya like to save some money and prepare something special (and healthy and easy, but shhhh, we won't tell) to impress your loved one with this Valentine's Day??

Yeah, us too!! 

We're especially excited about these V-day recipes because we know a lot of folks are experiencing FOOD sensitivities these days, which can also mean SKIN sensitivities, and we take that seriously so we created thoughtful meals to accommodate most dietary needs! 

That's why we've created a super easy and delicious appetizer, main course and dessert recipe for you to make for under $30! 

Did we mention it's good for your skin, too? 

But we'll get to all that anti-oxidant, vitamin, and anti-inflammatory skin stuff on our live TV segment!

Here's a run down of all the healthy recipes we cover in our TV segment: 

Appetizer - Sautéed Mushrooms

Will need: Mushrooms, garlic, olive oil, balsamic vinegar, salt, pepper and parsley.

Instructions: Sauté garlic and olive oil for one minute, add mushrooms, then cook all together for ten minutes

Garnish with parsley and drizzle with balsamic.

BONUS SKIN TIP: Mushrooms are rich in Vitamin D and antioxidants that help protect your skin against wrinkles and discoloration caused by environmental damage! 

Main Course - Vegan Curry with Meatballs and Mashed Potatoes

Will need: potatoes, beyond meat (sausage or patties), favorite curry sauce, avocado oil, vegan butter, parsley

Instructions: Boil potatoes and mash them with oil, add salt, pepper and vegan butter.

Roll sausage into balls and sauté in pan with avocado oil for 7-8 minutes.

Pour sauce over meatballs and cook for additional 5 minutes.

Serve meatballs and sauce over mashed potatoes and garnish with parsley.

Special Notes: If you want to make the sauce from scratch, the directions are right below. Otherwise, pick up your favorite pre-made curry sauce and follow the instructions above (we love the Maya Kaimal brand .. don't worry, we won't tell on you! ;) 

BONUS SKIN TIP: Turmeric is our superstar ingredient in curry which is full of antioxidants and is an anti-inflammatory that helps fight off acne and protects against sun damage! 

Red Curry Sauce Ingredients and Instructions:

  • 1 1/2 cups vegetable broth or water (360 ml)
  • 1/3 cup plant-based cream or canned coconut milk (80 ml)
  • 2 tbsp tomato paste (60 g)
  • 1/2 tsp fresh ginger (minced)
  • Ground spice mix: 3 tsp curry powder, 1 1/2 tsp onion powder, 1 tsp garlic powder, 1 tsp oregano, 1 tsp cumin, 1 tsp turmeric, 1/2 tsp nutmeg, 1/2 tsp smoked paprika, 1/4 tsp red pepper flakes, 1 tsp coconut sugar (or brown sugar), sea salt and pepper to taste
  • 1 tbsp cornstarch (to thicken)
  • Fresh parsley to garnish
  • To make the sauce, simply add the tomato paste to a pan (use the same pan which you used for the meatless balls), pour in the plant-based cream and stir with a whisk to smooth out the tomato paste. Then slowly add the vegetable broth while stirring.•Bring the sauce to a boil, add all other ingredients (except cornstarch and fresh parsley) and let simmer over medium heat for about 10-12 minutes (the longer you simmer the gravy, the more flavorful and thicker it will be)

    In a small bowl mix cornstarch with a little bit of water and add it to the pan. The gravy will get a little bit thicker. Keep simmering for a further 2-3 minutes.

    Pour the sauce over the meat-free balls and serve with either mashed potatoes, pasta, polenta or rice! 

    Dessert - Strawberry Delight

    Will need: strawberries, lemon, fresh mint and organic sugar

    Instructions: Cut up strawberries in quarters, chop up mint and mix together with the juice of one medium lemon in a bowl. Then place in a nice dish or cup and sprinkle with sugar. 

    BONUS SKIN TIP: Packed with antioxidants, strawberries are a wonderful source of vitamin C that help boost the immune system and spur collagen production!
