Healthy Vegan Summer Medley Recipe

Cooking Instructions: Bring 4 cups of water to boil for every cup of barley mix (we used Quick Cook Grains mixture by Central Market). Add a tsp of salt and a quick drizzle of olive oil to mixture. Follow instructions to cook for 10 minutes. Once cooked, mix in your preferred veggie blend (we used frozen diced vegetables from HEB) and cook an additional 7-8 minutes on low. Cover and let sit for 5 minutes before serving. Garnish with fresh basil and a drizzle of olive oil, if desired. 

Ingredients used: Barely, split peas and lentils (we use pre-mixed bag as stated above) mixed with a veggie blend (carrots, corn, green beans, tomatoes), Rotel and / or tomatoes and finely chopped jalapeño. Season and spice to taste.
